Mamu Breakfast Sausage

Mamu Breakfast Sausage

INGREDIENTS

8 ounces / 227 grams Mamu
½ teaspoon / .75 grams Sage, finely chopped
½ teaspoon / .5 grams Thyme, finely chopped
¼ teaspoon / .5 grams Ground coriander
⅛ teaspoon / .1 grams Grated nutmeg
1 teaspoon / 7 grams Maple syrup
⅛ teaspoon / .1 grams Chili flakes (optional)
½ teaspoon / 3 grams Salt
¼ teaspoon / .5 grams Black pepper
1 Tablespoon / 13 grams Neutral oil

INSTRUCTIONS

  1. Place everything except oil into a mixing bowl. Mix well
  2. Shape into 5 2-ounce (60 gram) patties.
  3. Heat the oil in a pan on medium heat. Cook patties until the internal temperature registers 165°F (74°C) on an instant read thermometer.

Note: Sausage mix can be made ahead of time and refrigerated or frozen. If refrigerated, consume within five days.
